The Ambur style
Ambur biryani comes from the Tamil Nadu town of the same name and is built on seeraga samba — a short, fragrant rice that absorbs gravy rather than staying separate like basmati. The masala is a paste of soaked dried red chillies, not powdered spice, which gives the dish its clean tang instead of heavy heat.
The meat is cooked first, the rice layered over it, and the pot sealed for dum. We cook it at your venue so it rests properly and reaches the guest hot, not reheated.
