Mor Kuzhambu: The Cooling Buttermilk Curry
The cooling buttermilk curry that keeps a hot-season wedding calm.
Read alongside: Curd Rice, Rice & Dal and Stone-Ground Chutney.
History
On a leaf crowded with fried and fatty dishes, mor kuzhambu — a gently spiced buttermilk curry — is the Tamil kitchen's cool, sour answer to heat.
Practical Reason
Buttermilk is a probiotic whose live cultures aid digestion; curd's cooling nature offsets the body-heat of chilli and fried food, which is why it appears at hot-season weddings. Cumin, curry leaf and asafoetida settle bloating, and a coconut-cumin paste thickens it without a drop of cream.
Modern Science
Live-culture dairy can genuinely help digestion for many people, though effects vary from person to person — the cooling, calming role here is as much culinary as it is nutritional.
